Spaghetti Squash with Tomato Sauce

Makes: 4 servings

Prep Time: 10 minutes

Total Time: 20 minutes


  • 1 spaghetti squash
  • 3 medium (ripe) tomatoes, quartered
  • 1 medium yellow bell pepper, seeded
  • ½ medium red onion
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon dry basil
  • ½ tablespoon garlic powder
  • ½ tablespoon oregano
  • ¼ cup parmesan cheese



  1. Using a fork, pierce the squash 10 times. Place in the microwave for 10 minutes, turning over once. Allow to cool for 5 minutes.
  2. Halve and seed the squash.
  3. Using a fork, scrape the inside of the gourd to create spaghetti-like strands.
  4. In a food processor, blend tomatoes, peppers, onion, and spices into a sauce.
  5. Top the spaghetti squash with the sauce and sprinkle with Parmesan cheese.
