Mint and Chili Spiced Black Rice

Mint and Chili Spiced Black Rice

Makes: 6 servings

Prep Time: 40 minutes

Total Time: 45 minutes


  • 2½ cups black rice, cooked
  • ¼ cup red onion, sliced
  • 1 cup celery, chopped
  • ¾ cup mint, roughly chopped
  • 1 teaspoon chili powder
  • 1 tablespoon extra-virgin olive oil
  • 2 limes, juiced
  • 1 (14 ounce) can hearts of palm
  • 1 cup sweet Campari tomatoes, sliced


  1. Mix all ingredients together in a large bowl. (Add the hearts of palm and tomatoes last to retain their shape.)
  2. Serve with Spiced Grilled Shrimp!
