Shredded Root Vegetable and Apple Slaw

 

Makes: 6 servings

Total Time: 30 minutes

Ingredients:

  • 1½ cups red cabbage, shredded
  • 1 cup carrot, shredded (~2 large carrots)
  • 1 cup parsnip, shredded (~2 medium parsnips)
  • 1½ cups apples, cored and sliced thin (~2 small apples)
  • 1 teaspoon dried parsley
  • ¼ cup red wine vinegar
  • 1 teaspoon dijon mustard
  • 1 teaspoon salt

Directions:

  1. Mix all ingredients above in a bowl and serve.
