Consider trying the recipes below and see how much you are able to save this year on your fabulous and festive occasion.

Pepper Roasted Pork Loin

Makes: 6 servings

Total Time: Approximately 90 minutes

Cost: $11.97 total recipe/ $1.99 per guest

 

Ingredients:

  • 3 pound boneless pork loin roast
  • 1-2 tablespoons cracked black pepper
  • 2 teaspoons salt

Directions:

  1. Rub pepper and garlic salt onto all surfaces of pork roast.
  2. Place pork in a shallow pan and roast in a 350 degree Fahrenheit oven for one hour or until internal temperature (measured with a meat thermometer) registers 155 to 160 degrees F.
  3. Let roast rest for 10 minutes before slicing.

Sizzling Green Beans with Crispy Pine Nuts

Ingredients:

  • 1½ pound fresh green beans, trimmed
  • 2 teaspoons extra-virgin olive oil
  • 4 cloves garlic, minced
  • ¼ cup toasted pine nuts
  • 1½ teaspoons freshly grated lemon
  • 1 teaspoon lemon juice
  • Salt to taste
  • Pepper to taste

Directions:

  1. Cook beans in a large pot of boiling water for about five minutes. Drain.
  2. Heat oil over medium heat in a nonstick skillet. Add minced garlic and green beans.
  3. Allow green beans to brown then add pine nuts and lemon zest.
  4. Dress with lemon juice, salt and pepper to taste and serve.

Savory and Sweet Mashed Potatoes

Total Time: Approximately 45 minutes

Ingredients:

  • 1 pound yellow potatoes, peeled and quartered
  • 1 pound sweet potatoes, peeled and quartered
  • ¾ cup low-fat milk
  • 1 teaspoon cinnamon
  • 1 teaspoon chili powder
  • 2 cups shallots, thinly sliced
  • 1 tablespoon extra virgin olive oil

Directions:

  1. Heat oil over low-medium heat in a nonstick saucepan and add sliced shallots.
  2. Stir shallots frequently for about twenty minutes until tender and brown. Transfer shallots to a small bowl.
  3. In a large saucepan, add water and quartered potatoes. Bring water to boil and reduce heat to low and simmer, partially covered for about fifteen minutes.
  4. Drain the potatoes and return to the pot. Add milk, cinnamon and chili powder. Stir and mash until potatoes reach desired consistency.
  5. Top mashed potatoes with crispy shallots and serve.

Ingredients:

  • 1/4 cup olive oil
  • 1 cup onion, chopped fine
  • ½ cup chopped celery
  • 1 teaspoon minced garlic
  • 1 pound porcini mushrooms, sliced
  • 6 cups reduced sodium vegetable broth
  • 3/4 cup barley
  • 1 teaspoon dried thyme
  • Salt to taste
  • Pepper to taste

Directions:

  1. Heat oil in a large stockpot. Add onions, celery and garlic. Sauté for about five minutes or until tender.
  2. Stir in mushrooms and continue to cook for another five minutes.
  3. Add vegetable broth and barley. Bring soup to boil then reduce heat to medium.
  4. Allow soup to simmer for about 45 minutes or until barley is tender.
  5. Add thyme, salt and pepper to taste and serve.

Ingredients:

  • 3 cups low fat ricotta cheese
    • 2 tablespoons honey
    • 1½ cups fresh orange slices
    • 1 tablespoon orange zest

Directions:

  1. Combine ricotta cheese, honey and orange zest in a bowl.
  2. Serve with orange slices as a topping.
